Los Nogales is a very special farm bought by the Salaverria’s family who have more than 100 years of experience in cultivating, processing and exporting one of the finest coffees in the country. The Apaneca-Ilamatepec region is known for its fantastic soils, micro-climates and the perfect environment for coffee.
In recent years, the farm have launched ‘Project Nogales’ which is a unique opportunity for buyers like us to choose a coffee by plot of land, process and variety.
We have chosen a fantastic coffee from the El Capulin plot, which is planted with the Red Catuai varietal.
This particular lot has been processed using the ‘double soaked’ method which we think brought a very interesting characteristic to the coffee.
After the beans are depulped from the cherries with 100% mucilage left on, they are submerged under clean water in the soaking tank for 10-12 hours, where natural fermentation occurs.
Water is then replaced and beans are submerged for another 10 hours. After that, they are dried under the sun.
Coffees from Los Nogales are processed at Mill Las Cruces, which is one of the most antique processing centres in the country.
The mills main body is an antique house with more than 100 years of history. It has the capacity to process washed coffees, semi-washed and natural coffees and also have different drying methods such as African beds, patios and mechanical dryers.
